The Deering Estate Foundation will host an exquisite and exclusive dining experience, Chef’s Table on the Bay – An Evening in Peru on Friday, April 11, 2025.
Under the stars on the Deering Estate’s courtyard, guests will enjoy a delicious, four-course meal with wine parings prepared, described, and shared by renowned chef Fernando Salazar of Platea Miami. According to Fernando, his culinary approach is Quinto Sabor, the “fifth flavor” symbolizing depth beyond taste, experience and sacrifice of every dish and the story behind them.
The evening will start with a cocktail hour sponsored by Golden Rule Seafood and Breakthru Beverage.
The menu for the evening is:
Ceviche Bowl – Hake, roasted red pepper & rocoto leche de tigre.
Tostones – Wagyu picaha, plantains, aji amarillo, salsa criolla
Surf & Turf – ginger butter poached lobster tail, anticuchera prime steak
The Garden – dulce de leche mousse, lucuma cheesecake, berries, nitrogen
